Salt Flakes is a gourmet salt of marine origin  that does not undergo any industrial process and is used in haute cuisine for the subtlety of its flavor.

This flake salt is manually obtained in Salinas de Chiclana, located in the south of Spain. It consists of allowing sodium chloride crystals (among other compounds) to rise to the surface of the salt flat and dry out due to the action of the sun and the wind. In the early morning, the salt is collected with shovels (manually) to prevent the crystals from breaking. The crystals are so delicate that the same wind can break them.

It is mainly used to finish meat, fish and vegetables.
